"The villages Cielito, Cedral and Las Flores follow one after another along the mountain range in Santa Barbara, Honduras. Around these parts you’ll mostly see Pacas along with Yellow Catuai and Pacamara. Santa Barbara is an area that has become recognized over the years, namely by some of the very same producers in the country producing award winning coffee year after year. Within Santa Barbara, one notable nook is continually the source of some of the highest scoring coffees we’ve cupped, El Cielito. It is here that we find Finca Genesis, the farm of Remigio Castellanos (or “Remi” as we know him) and his lovely Pacas trees. For Metric, this is our third year purchasing Remi’s coffee, who is also a coffee roaster by trade at El Dorao, a roasting company in Santa Barbara owned by the Paz family. At the age of 30, this young producer didn’t have much of an interest in pursuing coffee farming, but ultimately went into the family business after inheriting the farm from his parents. It’s been said that Pacas is what put Honduran specialty on the map and after tasting Remi’s coffee we can clearly see why. Remi’s Pacas has the benefit of slower maturation due to two factors; variety and high altitude, but the close proximity of the jungle, which sees lots of rain during harvest season, presents a challenge for adequate drying. Regardless, when some of the inevitable factors are mitigated to an extent, the result is some of the best coffee you’ll have out of this country and Remi’s coffee is fast becoming a Top Lot out of all the micros we purchased this year."
