"Wow! Rich, smooth, fat with a big syrupy mouthfeel…sweetly-tart with a long lingering finish. Very limited supply! Peru is about 3x the size of California which is a sizable growing region. The idea of focusing on varietals hasn't taken hold as most farmers grow a smattering of anything and everything (Bourbon, Caturra, Typica) So I'm focusing on regions: Amazonas, Cajamarca, Cuscos, Puno. This is an approach I took a few years ago with Kenya when we landed on the Kirinyaga cooperative. I'll be bringing in 3 farms from different regions. The first is from Cajamarca and it is a single farm ID lot from Wilmer Alarcon Mirez who has been growing coffee among other things to provide some biodiversity as well as shade. Wilmer is working toward growing quality coffee by improving production practices."
