AS ALL OF THE COFFEES WE SOURCE, THERMIC PROCESSING BEGINS BY PICKING ONLY THE RIPEST COFFEE CHERRIES. THE SEMI-WASHED COFFEE IS THEN INTENTIONALLY AND CAREFULLY HEATED WITH SOME OF THE MUCILAGE LEFT SURROUNDING THE BEAN. EXPOSURE TO HEAT ALLOWS THE SUGARS TO CARAMELIZE—CREATING A SWEET AND SYRUPY CUP PROFILE THAT IS QUITE MIND BLOWING.
