"It's been a whopping five years since we've last released this experiment using Champagne yeast to ferment Catuai! Champagne yeast is an ideal candidate for this type of experimentation because it is able to thrive quickly and relatively easily within the environment of a coffee fermentation tank. This yeast is not very fussy with temperature and seems to love the fructose sugars produced in coffee cherries. There tend to be flavors associated with grapes, cherries, apples, and other fruits high in malic acid production when brewed as a cup.
