"Agua Welcome to the world of cleanliness and purity. Like that of the sea jellies, these coffee seeds were soaked in an ocean of water. During the coffees’ short swim, fermentation, acting as wisdom, drives acidity, clarity, and focus throughout each tentacle of possibility. Allow us to introduce you to the grand-daddy of all Pacas. This Pacas, grown on the mountainside of Santa Petrona is a DMC gem. The Pacas family discovered this natural mutation derived from Bourbon genetics and bestowed the family name onto this glorious shrub. It is an ideal tree for cultivation because of its high yield of cherries, structural wind resistance, and is slightly higher in disease resistance than its parental genetic, Bourbon. High winds, depending on the geography and ecosystem of the land, can turn high-yielding crops into barren, leveled fields. Ingenious techniques have been developed over time to counter the devastating force of winds in the mountains. Wind can strip trees of their branches, leaves, and cherries and also smother smaller plants in dust and debris. The most common measure is growing trees sturdy or flexible enough to withstand blustering winds, like eucalyptus or bamboo, to protect the coffee tree. Another is developing coffee genetics via mutation, hybridization, or modification to create tiny, dense branch structures which sit closer to the ground creating a highly wind-resistant coffee tree. The older the coffee tree, the lower the yield, however, the cherries that are produced become more balanced and elegant with age. Acidity is rounded out and sugar content is explosive. This bean is a perfect representation of why El Salvador is a pioneering country for coffee excellence.
