"Edier Perdomo Claros and Pedro Claros Zapata are both from Huila and they are part of the same producer community that our PECA team in Huila works with. PECA is short for “Grower Education Program” in Spanish. They are a team of Agronomists that trained over the past 20 years to work on the ground with coffee producers. This lot of coffee was not a planned collaboration by these producers. They both tendered their lots to our warehouse; their team cupped the coffees and had the idea to blend their lots to create a larger lot and more complex flavor profile. This was run by the producers, who are friends, and they agreed that this would create a larger lot and a higher quality coffee. Coffee Review Says: Balanced, bright, deep-toned. Dark chocolate, red plum, almond butter, freesia-like flowers, oak in aroma and cup. Sweetly bright in structure with juicy acidity; crisp, satiny mouthfeel. The chocolaty and nut-toned finish is complicated by hints of freesia.
